Good afternoon folks.

Hello all,
Well I'm Rob and I'm from Essex in the UK.
I'm fairly new to smoking but I love it and get out in the back garden and fire up my water smoker aka the minion and start experimenting. As I said I have a small water smoker but am in the process of modifying it to make it an offset smoker so I can up my production and smoke more than three baby backs at a time. I do hope to one day open up my own U.S style smokehouse/BBQ pit restaurant because the U.K needs real quality American smoked meats. If anyone has any tips on the best meats to start off with or any tips or tricks then I will happily take them.

Hello Rob, welcome to the forum. Chicken is cheep, easy and forgiving, that would be good to get started.

Pork butt(Shoulder) is very forgiving and easy to smoke. If you can get one there. Hard to mess up.

Thanks for the tips lads and thanks for the welcome. Is pork butt also known as pork shoulder? If so then I can get that here.

One in same, ask your food store butcher, Not sure if they have Sam's, Costco or something similar they carry them. As a matter of fact I went to Sam's today and picked up a couple.

Thanks Gary, I have butchers shop just down the road from my house so I will stroll down there in the morning and see if they have any piggys in the meat locker.
Thankyou for the welcome Mike. I will be after advice on all aspects of smoking as I'm hoping to open my own lil smokehouse / BBQ joint here in Essex some day, but for now I'm just doing it for my friends and family.

Welcome to the forum bobbob. I think there might be a UK group on the forum here if you want to check the search function. Just a clarification..... a pork shoulder has 2 parts.... the butt and the picnic so when you get a whole pork shoulder you get both. A little different texture and flavor from the upper and lower parts. If you get just the butt you are getting just a part of the shoulder.
