Turkey carcass and greens soup

I finally made the time to use the carcass I saved at the last turkey smoke. I used a variation of one my childhood soups - ham hock and greens (eastern European).

Chopped some Tuscan kale and collard greens


Cooked the bones for about 3.5 hours


After picking the meat off


Greens blanched then added to the pot; pic taken 30 min later


Finished with sour cream


Lemon or vinegar will be added in the bowl.

I make soup from chicken and turkey left overs as well.  I like your ingredients!!!  Looks very tasty!!! Reinhard

Yeah, soup from bones! Lithuanian background here. A nice ham bone simmering while split peas or barley soak...

 

I still have a zipper bag of turkey stock ice cubes in the freezer. In the fridge I have the second half of a big jar of chicken stock from the bird I cooked on the Weber recently.

 

Soup stock made from bones = meat jello!

Stock ice cubes? That's an interesting concept. I can think of a lot of uses.
