I have a 7lb Butt in the freezer that I'm thinking of smoking but I was also considering do a brine for this one so I was thinking if I could cut down on the time by sticking it in the brine solution to also thaw that way.  Or would it being frozen just counter the briny goodness?

Thanks for any help.

You're welcome! If you can scrounge up the ingredients, it brings a nice flavor profile into the pork. If you can do a longer soak of several days or more, the brine will penetrate that much deeper. It sure changed my outlook on pulled pork back in the day. I'm more into other methods for PP now days (see wet/dry smoke chamber) but I can't discount how a good brine, and enough time, can change your pulled pork for the better.

Enjoy the smoke!!!

Eric
