Hey all, got the day off and figured I might as well be smokin' since the weather is clear. I decided on a rack of baby backs and 3 center cut chops. I made the rub as soon as I woke up and went with a little different flavor profile. As with most of my rubs, this one is a brown sugar base with kosher salt, granulated garlic, paprika, old bay, black pepper and a little accent. They had a few hours to nap in the fridge before I fired up the smoker.
On the Vision Pro C and ready to roll. I am using a combination of apple and pecan this time around. Stay tuned!
