I am doing a 4 1/4 lbs. loin tomorrow for new years day.
Brinkmann full sized charcoal grill - lump hardwood with apple wood
Injecting - I have not injected tenderloin before but will be using the following recipe:
1 stick unsalted butter
1 tbsp Worcestershire
1 tbsp soy sauce
1 1/2 cups beer
1 tbsp garlic
1/2 tsp cayenne
1/2 tsp paprika
1 tbsp onion powder
Currently the loin is in the brine. After injection I will lay a bacon weave over the top and fire the pit up.
The wife is going to make homemade biscuits to serve it on. Normally we do it with Emeril's cole slaw recipe on top but we will have it with sauerkraut tomorrow.
I can't wait!
