Beef Slim Jims

Made these the other day, forgot to post. 2.5 lbs batch. Shown is little over 1.5 lbs. 22mm collagen casings.

You always seems to make the best looking jerky on the site! But, their is lots of great competition.  

 

Can you shed some light on the recipe or steps to making this, I have been trying for a long time to make a homemade casing-less Slim Jim, I have gotten the texture down but not the flavor?  Can you please help me?  It would be much appreciated!
