So for my buddy's birthday, we decided to go to the lake house for the weekend. It was a guys only weekend so that means BBQ and beer. One thing that I love about my UDS is how portable it is and easy to take anywhere. We kept it simple with just a couple racks of ribs and some steaks.
The first night we just grilled up some nice boneless ribeyes and baked potatoes.
Didn't want to run out of beer... What, a keg for 2 people is excessive? Nah, we are celebrating and it wasn't completely full.
The next day we fired up the UDS and put on the ribs that had been seasoned the previous day. I plugged in the BBQ Guru and let it go to work. Gave us plenty of time to get some fishing in during the initial stage of cooking.
Thin blue smoke so thin you can barely see it, still smelled up the yard pretty good.
Ready to be foiled after about 2.5 hours
Foiling (the Texas crutch as my friend refers to it lol) with melted butter, apple juice, beer, seasonings and plenty of love.
After foiling for about 2 hours, the ribs were fall apart tender already without the last bit on the grill. When I went to move them back to the grate, a chunk just pulled off in the tongs. We just took them off and let them rest for a while. Here is the final product for a happy birthday boy.
The neighbors dogs knew it was dinner time too.
