Still need to make adjustments to my smoker . i finally snapped a picture of my smoker and here it is: My cousin called me asking to smoke ribs and chicken . I still need practice but i thought to myself this is practice ! so i started with the ribs it was a dry rub: then the chicken just put lemon & pepper: after prep. time i went out side started with about 10 charcoal coals once charcoal was grey i started adding wood . I got the temp up to 275 . went inside and got the meat placed it in the smoker . was running at 225 for 2 1/2 hrs . after that i wrapped both the ribs & chicken . for the chicken i poured a full beer on it . let it set in the foil for another hour running at 190 to 225 . temp. wasnt stable . after that time i took them out the foil and left them unwrapped for another 40 mins and this was the results.

I cut the chicken up because I have a tuff crowd to please . They always have something to say but the leg fell off when I took it off smoker. I know one day I will get this down and it will be too late for them .

Looks like you got off to a good start, did you take any pics of the finished food? The chicken should have been ready at about 2 hours or so, but the ribs would be 5 or more hours. 

Let us know how you made out!
