Folks Im looking for some Tricks and Tips.. with my fire side box...

Im having problems maintaining the temp of my smoker.. then i add coals or wood and the temp jumps up too high..

Dont know what Im doing wrong.. or what i can do to improve

Jay, morning...  How about pictures of the smoker, firebox, firegrate, amount of wood, charcoal etc....   we need more info to help you......  how you stack the wood in the FB, do you use the minion method.... How you have the FB intake set, how you have the exhaust set....

The amount of fuel will affect this. If I put a whole chimney of fuel in and almost close the damper, it's too hot. I have to go with 1/3 chimney full and add more as the smoke progresses. You can accomplish the same thing using the Minion method.
