I'm John from the Dayton, Ohio area, semi-retired Physician Assistant. I've done a bit of smoking over the years, a vertical charcoal smoker & a larger grill where I can keep the meat at one end and coals at the other. I stumbled into the forum when I was trying to track down recipes for brining and the like. Saw a thread from here on making pastrami, and the hook was set! I'm waiting on a 3rd attempt at shipping me an offset smoker...the first two got a little crooked during shipping, ha. The forum looks great, fabulous info & recipes, and I just found the Fattie Throwdown thread...I'm toast now!!!

Welcome to the forums, John! Glad you've joined us. You've found a great place to learn and share ideas on our favorite pastimes...grilling, smoking, and curing great food! There are lots of friendly and knowledgeable folks here who really enjoy helping one another. Just ask any time you need help and you'll get plenty!

Got it, read the terms. Noobie question..OTBS? Thanks! Oh, have a corned beef pastrami on the smoker...just had to try that!
