Gary here from Birmingham, UK. I found this site after searching for some info on cold smoking, and this site seems to be a 100% match, so I'm a happy bunny.
I'd like to try cold smoking beef, fish and Bacon,to start with, beef as in the meat used in a 'New York' sandwich - the name completely evades me (doddering old fool am I) although I'm not sure whether this is hot or cold smoked. I trained as a chef, but at present am unemployed, but still looking! When I was at college we smoked some salmon, which tasted fantastic. I love bacon and would like to do my own.
I'm unsure whether to buy a smoker, or build my own. Living in a city has certain disadvantages as in neighbours and would have to look into the amount of smoke released, my neighbours are pretty good though, and I'm sure a peace offering of some home smoked bacon would 'ease' any situation. :)
