I smoke 15-17lb butts, pull it and make meals all week long with it. Some of our favorites:
Shepard's Pie - chop the pull and sauce lightly, layer it in a casserole dish, layer with corn, then layer mashed potatoes, top with shredded cheese, in to the oven for half an hour or so.
Breakfast biscuits - flatten canned biscuits (individually) put a tablespoon or so of shredded pork in the center, add whatever else you like, I use the leftover yolk stuff from deviled eggs, a touch of BBQ sauce, a bit of bacon and wrap the biscuit around it, twisting the top of the "packet" together, pop in the oven!
Pulled BBQ tortilla wrap - reheat a half cup or so of pp in a bowl in the microwave (I add a touch of finishing sauce & cover with a wet paper towel, nuke til just warm so it doesn't dry out) - throw a tortilla in a pan to warm up and crisp it a little on both sides and then quick pull it of the stove, put the pp with a touch of BBQ and wrap (quickly, once the tortilla starts to cool it loses it pliability) -- a nice, quick lunch without the bulk of the bread... Add a bit of cheese, chopped onion, a little lettuce and YUM.
