First smoke this weekend - tips?

Hey all, gonna do my first smoke on the WSM this weekend, going with a grass-fed brisket. There's only two of us, so I think my plan is to just do half of the packer cut I'm buying and freeze the other half for now.

My rub has a substantial amount of turbinado sugar in it; if I smoke this thing for 10+ hours, will this sugar burn? I've used it on ribs before and it's been fine, but that's only been for 2 hours unwrapped.

Anyone use a turbinado sugar-based rub that can comment?

I've used turbinado sugar-based rub on brisket before and never had a problem with it burning,  but I cooked between 220-240 the whole time. Hopefully it turns out well for you and good luck. Are you planning to foil? I wrap around 170 in a foil pan to save all them good juices! Happy smoking.
 
Turbinado sugar will be just fine. I prefer the taste of brown sugar and recipes calling for turbinado sugar will be halved with brown sugar. Yes the brown will burn/blacken normally but I usually compensate some with lower temps and/or misting.   

Best of luck with your packer. For two people I would split it in order to try a different recipe on it. I cook for two people all the time, food get's boring eating the same tasting thing too many times.
