I bought a Brinkman Gourmet electric smoker last year from a neighbor, used, and i've had a lot of fun with it. Some things weren't as good as i wanted, but everything edible mostly ! My smoked fish has been pretty good. My smoked chicken wings excellent, and i smoked a whole beef tenderloin after a quick sear on the grill and it was fabulous. My experience with brisket, tri-tip, and baby back ribs was ok, but not stellar. I've heard there are mods for this smoker to make it work more efficiently. I called Brinkman and they said "it doesn't need a thermometer because it maintains a consistent 275 degrees as long as the water bowl is full". Anyone know of mods for this smoker or should i move up to something easier to control ?
