Yesterday I marinated chicken thighs for the smoker.  Used Jeff's marinade recipe from his book, de-boned them and used a simple rub of salt, pepper, garlic powder and smoked paprika.  Turned out good,but not quite as good a few weeks ago when I used Sun Dried Tomato Vinaigrette instead of the Tuscan House Italian I used yesterday.  Used mostly alder with a little black cherry wood.  Also tossed in a couple of small whitefish since there was room

Actually I was a little lazy with the fish.  I brined it in a water/salt/Tony Chachere mix and used teh same rub I did on the thighs.  Pretty simple but tasty.
