Hi guys!! I'm Olivia. A Filipina married to a Polish. Which is the reason i am here! I wanna learn how to make my own kielbasa. I've been making Filipino longganisa, aka chorizo. I've been slowly gathering all necessary equipments for sausage making. I'm only missing a smoker and stuffer. Anybody else from HotLanta? :) have a great day everyone!

i do have a quick question on your [color= rgb(24, 24, 24)]longganisa, do you have a recipe to share for it? I'm going to the philippines in a month or so to visit inlaws and figured we'd make some while i'm over there.[/color]

The longganisa I make is Vigan longganisa. It's garlicky and vinegar based. And here's the recipe I use:

Originally from Dunwoody. Now lives in Sandy Spring which is only about a mile away. Have you tried Patak's Meat? Their kielbasa is to die for! Which inspired me to make my own lol
 
Hi Kat n welcome!  Not from Atlanta, but am from S.E. Georgia!   I am a newbie here myself, and haven't been online in a few weeks.  I have to say that from what I see, all "newbies" can learn much here.  I haven't gotten into sausage making, other than venison links. We used packaged spices, and I wasn't very impressed with the taste of the spices, but the sausage turned out great.  Good luck!
 
I haven't tried Patak's meat, but it is now OFFICIALLY on the list. Usually when I go home it's a mad dash to eat everything that isn't in DC (Hardee's, sonic, zaxbys, Waffle House, chic-fil-a, j christopher, etc) so since I'm trying to eat all the old stuff, I don't find new stuff. But I hope it doesn't inspire me to want to make my own sausage. Grilling is an expensive enough habit. My wallet can't handle another lol

Thanks for the recipe, gonna have to make it for the wife soon. AHHHH, balut, been there, tried it, not my cup of tea. Taste wasn't bad at all, but its the texture that I just couldn't handle. However, the dinuguan I had in while in CDO was VERY VERY GOOD, well, until i bit into a big chunk of gristle.

^ LOL! I'm sorry, I gotta ask this... Are you Caucasian? Cause all the white people I know hates dinuguan. They would cringe every time I tell them it's got blood in it. LOL. My African-American friends are more adventurous, they would at least try it and say that it's not bad, just weird. I always have to hide the evidence whenever I cook it, cause my husband don't like seeing it in our kitchen. 
 
HAHAHAHAHAHA, i'm white as a sheet of paper. european/canadian mutt heritage. however, my dad always taught me to try something before ya say no to it. i just fall in the strange to very weird catagory of people in the many walks of life and kindly proud. how many people miss out on such a dinner just because of the list of ingredients.  well, i ain't gonna be one of em! i'm too fat already to miss out on good food in life.........
