I'm smoking my first brisket in the morning.  I bought a 12lb brisket and I trimmed 5lbs of fat off.  Is this normal?  I left a thin layer of fat, but I cut more off than I thought I would.  Are some briskets fatter than others?

That sounds like a lot to me and I've done my share of brisket. Sounds like you bought a whole packer. Considering you are going to lose about another lb and a half or more during the cook you may want to try another meat supplier.
 
I don't usually trim briskets before cooking.  That does sound like a lot of trim, though?

Having said that, weigh your brisket raw and after smoking.  You will be amazed.
