I have the master forge dual door gas smoker and noticed anywhere from a 10 to 20 degree difference in temp from front to back end  the back being cooler have checked with oven temps and a digital temp just wondering if that has an effect on cooking any meats evenly? thanks
 
That is a good thing to know. Most smokers will have hot spots in them or areas that are hotter than other areas. Knowing where they are is very helpful when smoking. Doing smaller things it helps you know where to place them. Large cuts aren't as critical but rotating them can help keep them cooking evenly.

Are you running water or sand in the pan?

I just bought the sand did some test runs with it going to do 2 9lb shoulders saturday
