Hello everyone,
I have just recently begun to smoke and am loving it! I am currently using the infamous "ECB" that I have heavily modified.
I am in Southern California, and have smoked several types of meat thus far with several recommendations from this site.
I finally joined because I need some input from those of you out there with experience. First, should I use the water pan for water or sand? Second, lump charcoal vs briquettes and your opinions.
