Hello Everyone: New guy here. I've been reading the site for the better part of the year and using all your suggestions. You have all helped me out tremendously, if you know it or not. I live on the Central Coast of California in wine country. I have three pork shoulders in the smoker now and will be enjoying it with a good bottle of Sangiovese while watching the game. I have a Smokin-It smoker from a maker in Ohio and really like it. My dad recently visited and liked it so much he bought one too. I then turned him onto this great website. My dad and I recently bought a couple of Todd's A-MAZE-N-Smokers. What a great product and a great company owner. Not many business men like Todd out there any more. If you don't own one then you are missing out. The wife and I like to smoke cheese, meat, nuts, olives, mac & cheese, fish, chicken, vegetables, etc. With all of your advice we have done very well with few exceptions.
I am retired from the USAF and now working for the Department of the Air Force. The wife and I love the CA weather, smoking meat, drinking wine, brewing beer, but hate the CA politics/politicians (but we'll reserve that for another time).
