Hi Folks,

Just wanted to quickly introduce myself. I live in the Niagara area (St. Catharines, Ontario) and bought a M.E.S. from Sam's Club yesterday.

Currently 1/3 of the way through seasoning it and have a 6 lb brisket marinating overnight in the fridge.

Definitely new to all this but have signed up for the newsletter and e-course. Any advice would be more than appreciated.

Rainy today but nice and mild for January (set a record here yesterday). I have the electronics covered with a ziplock bag and the top of the smoker is cool to the touch after an hour at 275, so I think I'm good there. Bought an air conditioner cover at Home Depot to cover the smoker when not in use.

Probably going to get an AMNPS to help with cold smoking.

Am I on the right track so far? LOL

Welcome !! Looks like your on the right path. Crazy temps yesterday weren't they? I'm just a little way east of you in Rochester.

Hi Rob.  I'm new here too, noticed your post because I'm born and raised in St Catharines north end, now living in Saskatoon.  Our temps are nearing -20 C right now.... but I also will be smoking my first brisket today.... Just doing about 4.5 pounds, so I think 8 hours should be lots at 225.

Have an electric Cajun Injector smoker, worked great for ribs last week, so hope the results stay just as good today.

Good luck and enjoy the warm weather while we freeze up here LOL!

To SMF!  We are glad you joined us!   Sounds like you are right on track to me!

We are in North Alabama...and it feels mike March Weather here.  I am still wishing for at least one snow this year!
