Hey fellow smokers! Just got first fatty prepped and assembled and was really pleased with how easy it was! I did the fatty that mike had made. Man mike how the heck did you roll that bad boy!!! Lol. I figured I would get up around 5:00am and get my MES 30 started and preheated. I think I will put it on at 6:00 and smoke for 3 hours at 230. What is the done IT for these. Will also be doing some ribs later for dinner. Here's some pics of the process!!!

Looking Good Mike! One tip, roll the fattie, wrap in plastic and put in freezer while you get the bacon weave ready then take out of plastic and roll it in the weave. A little more work but I have found it rolls easier and better.

Fatties are done at 165*, but I just wait until the bacon is kind of crispy, by the time it's crispy it's hot inside! This is another one you can smoke a little hotter, it helps the bacon a lot!
