Smoking my first Pork Butt and ABT's

OK all...

Here's my first attempt at making a pulled pork and ABT's!

I bought a 6lb pork butt at Sam's Club (Came in a 2 pack, $1.58/lb). Cut about 1lb of fat off, rubbed it done with some olive oil and some rub. Wrapped it in foil and placed it in the fridge over night. Got up this morning, ran some errands, started the coals (with hickory) and proceeded to re-rub the pork but with same rub. when the temp got to 210F I placed the butt, in a foil pan, in the smoker. Been in (at this time) for a little over 2 hours. It's currently at 135F and the smoker is maintaining between 225F-270F. I placed a water pan (an old bread pan) and have mopped it once with another coming up in 45 minutes.


I decided I needed to try some of the ABT's...as part of running errands, I went by Kroger's and purchased some red jalapeno peppers and cream cheese. I topped the jalapenos, put a horizontal slice. Mixed the cream cheese, some Mexican blend (cheddar and jack) cheese and some chipotle pepper, stuffed with mixture and wrapped some halved bacon, partially fried as per someone's suggestion on here? (Sorry, I've read so much, I forgot who...probably SoFlaQuer)

Looks like you are off to a good start.... I don't trim a butt (or shoulder). And I don't leave it in a pan to smoke. I'm not, at all, saying either are right or wrong.  Honestly pulled pork is pretty hard to mess up! haha  I believe you will love the results!

Yeah, I read some trim their butts and others don't...I did 'cause I'm always looking for way to cut the calories (as if that matters in BBQ?!). It took 3h15m to get to the required 165F, it's now at 172F wrapped in foil!

ABT's went on at the same time I wrapped the butt!

Been able to hold the temp between 210F-250F, not doing much smoking now, just using white oak and hickory top keep temps!

 
Looks good so far!  I am with BBQ Bill...I don't trim either....the fat helps it get oh so juicy and yummy.  It will melt away.  Keep us posted with pics!

Thanks for checking in on me Kathryn! I'll keep you all posted. I didn't get a chance to post a pic of the butt prior to wrapping, but I will once I unwrap!

My neighbor stopped by to borrow my steam cleaner (he's from Atlanta) so, he'll be partaking in the butt and ABT's as well! I love to share my cooking/smoking!
