Hello all, 

Santa brought me my first smoker.  It is a Masterbuilt 30' Electric smoker.  Model 20070712.  I am new to smoking, but love to grill and cook with dutch ovens.  I plan to make a pork tenderloin wrapped in bacon with peach sauce tomorrow.  I plan to use Hickory chips (unless you guys say not to).  

My question is should I put the wood chips in right away or wait till towards the end.  I figure it will take about 2.5-3 hours to cook. I just don't want to overdo it with the smoke on my first attempt.  

Any suggestions would be greatly appreciated.  Thanks and Happy New Year!

put them on in the beginning. 3 hours isnt long and it wont come out real smoky unless you keep the vent closed. personally i think hickory and mesquite both are a little too harsh on their own so i always mix them with something else like apple or cherry. youll definitely be able to tell the difference in all of them as you get more experience with it.

I smoked a bacon wrapped tenderloin the other day and it came out really good and super juicy. smoked at 220 degrees and used mesquite and apple wood mixture. Took it off of the smoker at around 140-150IT and foiled it for a bit.  Don't forget the Q View and Good Luck!

Thanks for the info.  What is Q View everyone is talking about?  I will keep you posted on how it turns out.
