Hello folks and a belated Merry Christmas!
My name is Scott and I'm from Sulphur Springs, Texas .... 80 miles east and west from anywhere that matters!
I'm no newbie to smoking - but I'm FAR from an expert. I've exclusively used custom built smokers. My first one was built by a welder who was working on my house that was under construction. Beautiful smoker that included an offset, two chamber doors and an upright chamber. LOVED THAT THING! Unfortunately, when I moved I had to leave it behind as part of the house sale. That was 13 years ago. I bought a custom-built trailer smoker a few years ago --- a large rig with two horizontal chambers. I've used it infrequently over the last 5 years, but have produced some really good meat (except for the ham two weeks ago --- too undercooked).
For Christmas my wife paid a local guy to build me a new patio smoker -- horizontal chamber with a vertical chamber on the end. I'm very excited and ready to get back to a life full of sleepless nights and smoke-filled dreams. Nothing better than an Earl Campbell's Sausage wrapped up in a tortilla for breakfast --- warmed up in the vertical chamber while a beautiful brisket and a slab of beef ribs sit in the horizontal chamber.
(If anyone can direct how to post pics, I'll do so tonite -- just for fun).
Just found this forum and I've already gotten some great ideas. Thanks for all the info posted over the last few years -- I've got nothing done at work today because I've been reading here!!
