Had a ham shank in the freezer my wife purchased while grocery shopping a while back, and also a ham I got from work.  Both fully cooked and smoked.  The one from work we get every year, while it is good, not as good as I would like...  And it does seem a bit processed... The other seemed like a very good trimmed ham that my wife got from Wal-Mart no less...

So we decided to make these hams into Christmas dinner.  Fired up the propane smoker on a VERY cold Christmas day.  Scored the hams 1/4"-1/2" deep all the way around.  No seasoning on them at all.  Basted/spritzed with apple juice.  Pan underneath to catch the drippings for gravy.  Smoked for 3 hours at about 225 with apple wood chips.  Then for what I thought would be the last hour on the smoker I mixed about 2/3's of a cup of maple syrup with a few tablespoons of brown sugar.  Heated up and made a glaze.  Glazed them for the last hour, until my smoker decided it didn't like the 2nd propane tank I hooked it up to.  So finished last half hour in the oven at 250*.

Turned out GREAT!!!!

Before goin into the smoker....

Steamy and smokey in the smoker

Yum!!!!!  Along with green bean casserole... Mashed tators and the gravy my wife made from what was left of my glaze and the drippings.... Yum!
