I have been cooking a long time and using different pits to do so... I just bought my 1st Dedicated smoker. I bought a gas-fired smoker. I've only used it a few times so far with great results. I came to this forum, to look for different ideas. I'm wondering about using a water bath as an alternative to just smoke and heat...
