I doing a 12 lb turkey for Sunday.  I just put the turkey in a brine for about 24 hours.  I am planning on putting the turkey in the  fridge for 12 hour to dry.  Is it best to inject the creole butter when I put it in the fridge or wait till when I putting it on the smoker?
 
Just did a batch of hind qtrs with Creole Butter.... let sit for 6 hours, 350 for 1 hour, they came out great.... moist... good flavor....    No smoke though... in the Nesco roaster oven to test the butter....
