Easy Turkey Salad

Had a little over 2 pounds of turkey leftover, still...so I used my double-smoked ham-salad recipe and substituted turkey.

I used a medium plate...should have used coarse as turkey crumbles easier than ham. It is still yummy.

IMPORTANT - Put in all ingredients and 1/2 of the mayo. From there, add mayo to-suit.

Like many dishes, turkey salad is better a few hours after it is made and the ingredients have time to meld.


(Ham) Turkey Salad Spread

Yield: About 12 servings

Ingredients
3 cups ground fully cooked ham turkey (about 1 pound)
2 hard cooked eggs, chopped
2 tablespoons finely chopped celery
4 teaspoons sweet pickle relish
2 teaspoons finely chopped onion
1 cup mayonnaise
1 tablespoon yellow mustard

Right up my alley!! I went out for Thanksgiving this year so no turkey soup or salad. I did whip up a huge batch of egg salad to fill in for the missed deviled eggs.

I thought about it for like a millisecond, but it was too easy to make and the last few throw-downs had BEAUTIFUL looking entries.
Just remember there are a lot of prizes to be had, and one never knows what will catch the eye of our members.
