It is pork loin I used. I would add more salt n pepper though. I have 2 more curing in the fridge now will post pics tonight. I add some Creole seasoning to one I will list what I did on new post tonight.
 
i dry cured it with some Fast Cure i had that i got from the supermarket a couple years ago. i also used black pepper and sea salt.
