Hello to all the old pros and the newbies. I love the information available from this site, all the errors, successes and unsure results. I have mostly been smoking fish on a little chief smoker as it is pretty easy to use. I have a Brinkman electric, R2D2 type and I find it to be too hot. Just built a BDS "beautiful drum smoker" and I love the way it works. I also use a Weber 22 1/2 kettle to just que on. I am interested in trying to try my hand at smoking cheese, cool smoke of course. I just don't know how to go about it. Looking for info on cool smoking. Thanks to all the old pros for the help.
