i have a pork shoulder in the smoker as you read this and need some advise.  the smoker im using is a tregor pellet smoker and it has three temp settings.  im trying to keep the temp around 225 but my low and medium setting seems to have the smoker at 175-200 for the low setting and anywhere from 260-300 for the medium setting.

im about 5 hours into the smoke and just got an IT of 144.

what is the best course of action?'

thanks in advance for your help.

You are past the 4 hour mark and above 140.

How much does it weigh? Usually you are 1.5-2hr per pound.

You could put it on medium and let the IT get to 190, wrap, place in low oven or cooler and let rest and the carry over temp will rise to about 20i.

the package it came in was 16 pounds with two but the one on the grill was definitely bigger.  so I'm guessing its about ten pounds.  i think i will take it to 180-190 then let it rest in the oven.

Late to the party here, but I would put it on medium and let it ride - pork is VERY forgiving and running it a little hotter isn't going to hurt you at all.
