My First Jerky - SUCCESS!

So after seeing how much my wife was buying jerky by the ounce for, I decided to pick up a couple jerky screens, some seasonings and picked up a couple pound round.

As this was my first attempt at jerky, I only did about a pound and a half in case it didn't turn out well.

Marinated for a little over 24 hours then smoked with mesquite for 2.5 hours at 200F.


And the money shot!


Well, it only lasted about 3 days, even my kids, 7-8-10 all loved it.

I just picked up a 6lb round on sale for $2.99/lb, and it is on the todo list for Friday.  Gonna try some strips and nuggets

Your jerky looks good !!  I have some of the same jerky screens and really like them. I found if I spray them with some non stick spray they clean up quicker.
 
Thanks nybbq, and yeah, luckily I thought of that ahead of time and sprayed them well before putting them in the smoker, definitely made cleanup a lot easier.

Great looking jerky! I too prefer the 'across grain' cut vs 'with grain cuts'.  New to smoking jerky, used a dehydrator for many years with good results.

How thick did you slice the meat?

I love me some Jerky but for a guy with no lower teeth anymore jerky has to be chewable and it looks like the cut was a little thicker so was it pretty tender? I know thin strips are usually hard as heck, nuggets I believe are kind of tender as well. I usually buy beef sticks because that is all I can eat unless it's thicker cuts. I will be getting my (MES 30 or 40 if I can afford the 40) smoker in a couple weeks. I know plenty of guys have done beef sticks here but that requires all kind of money buying casings, stuffers, grinders and such so that's out for now.

I guess that is something I could experiment with though, thick cut turkey jerky is awesome as well as I have had that from some vendor at the MN State Fair.

Hey dhoupt, I sliced it right at 1/4" thick.  The slices were across the grain, I've had enough jerky that I had to rip apart before, and I did not want that.  This round was very lean, so this jerky came out tender and very chewable.  Just can't beat the flavor.  I made some cracked black pepper with garlic and some cajun flavors the other night, the cuts were a little thinner, but still chewable.  I think I'm sold on the Hi Mountain stuff, especially the Original, as is everyone else in my house now.

I am going to try some pork jerky from a lean tenderloin next, I'll post those pics when I do it for sure.

SmokinJo, have you ever tried making it with ground beef? That's what I use. It's not quite like the whole muscle jerky, but it's sure easier to chew.
 
I've never heard of Ground Beef Jerky..lol  Thanks for letting me know, I might give that a try someday.
 
Hey SmokinJo, the Hi Mountain kit includes instructions for using ground.  My neighbor just gave me a dozen pounds of ground elk, I may have to try making some with it.
