Yesterday's Pork Butt Smoke and ....

Picked up these beauties this weekend. With help from Jeff's Rub, they spent the night before last in the fridge. Fired up the smoker yesterday morning, fetched the beauties, and found the fridge at about 55 degrees. Not good, but more on that later. Pulled the butts from the smoker right after this picture.


They stalled for about an hour making me a bit uneasy they'd be ready for company and dinner. Should not have worried; they were great. My neighbors think I'm a rock star. The pork butt is my go to; just wish I could get a brisket to turn out as good.

Last night, the fridge temp was 71 when we called it a night. A repair man is due today between noon and 2pm. We are hopeful we won't be shopping for a new chill chest after he leaves. In the meantime, we're hopeful the ice holds out until sometime this afternoon. Sure would hate to have the leftovers and the untouched 2nd butt spoil.

 
During the heat wave this summer....our garage fridge stopped. Was stuck in defrost mode. Had it fixed and was cheaper than a new fridge! Hoping for the best!
 
  Those butts look nice. Don't give up on the brisket. Once you figure it out, you will see that they are not that hard. Check out Jeff's tutorial on brisket. Works everytime for me!
