Rib Question about rib-rack with 2-2-1 Foil Method

Hi everyone!

I've been tasked with making some baby back ribs for a party next weekend, and I've never done more than 1 slab of ribs at a time. I love the way baby backs turn out with the 2-2-1 method, but I'm wondering if that method works well when the ribs are placed vertically on a rack. I need to fit 3 slabs of baby backs into my Weber OTG. 

Has anyone done the foil method on a rack? How'd it turn out? Anything to do differently?

I usually go for the full 2 hrs in foil and I think I might flip the ribs after an hr so they benefit from the juices more evenly.

Thanks for any advice you may have to share, it's because of the information on SMF that I was asked to BBQ for the party in the first place....
 
During the foil phase lose the rack and pile the wrapped ribs on top of one another.
Awesome, thanks! ....and DUH! on my part, that's too simple and I've seen those stacks of foil before...

What about during the final hour? I want to serve my ribs dry with a nice bark, can I do that in the rack, or should I finish them flat (in the oven)?

I remove the whole grate and get the lid back on the fire to avoid temp spikes.  Once the grate is on the work table, I remove the ribs from the rack and foil them, stack them on the grate and return the grate to the grill.  When I want to unwrap, I again remove the entire grate and get the lid back on.  On the work table, I take the stack of wrapped ribs off the grate, place the rack back on the grate, unwrap the ribs and place them back in the rack, then reinstall the grate onto the grill until they tighten up the way you like them.

Clear as mud?
