Smoked some baby backs today with the mes-30.  The rack was a bit over 3lbs, rubbed with yellow mustard and Jeff's rub and refrigerated over night.  Had to cut the rack in half to fit the mes and smoked at 235-245 deg via mav 732 for a tad under 5 hours.  Used the amnps with 1 row filled with pitmaster.  Smoked for 2.25 hours no foil meat up, 1.75 in foil with Trigg's ingredients of brown sugar, parkay, honey and tiger sauce along with a bit of apple juice meat down, and finished them for 50 min out of the foil meat up.  I did not sauce these, had sticky fingers sauce on the side.  Overall they turned out great and not to sweet despite the brown sugar and honey.  They had good "bite" but were still tender.  The wife likes them fall off the bone so next time i may leave them in the foil 15 min longer or so.  I also smoked some abt's as well.  Check those out in the abt forum shortly.  Some pics below.
