A couple of days ago, I removed a bone from a pork butt and got it out pretty good however, I was wondering if anyone has tried a different technique.  How wouold it work if you asked your butcher to use his band saw and turn the butt on it's side and cut it perfectly in half right through the meat and the bone.  Then I could remove the bone from each half portion easily with a less messy cut and have two even halfs left for cureing and sliceing.  Can you see any reason why this wouldn't work or am I missing somethiong.  I have only done this once and am certainly not an expert.  Set me straight???

Paul, morning and welcome to the forum......  One problem I see is bone fragments.... Boning the butt shouldn't take but a minute or so with a sharp knife...

I wasn't thinking about how quick or how long this would take but rather about how even and consistant that the two halves would be and how much better the slices would be.  I would think that I could clean bone frags away pretty easily.

Paul.. several different ways to smoke a pork butt, but the simplest and most common way I know of  is cooking it long and slow.  When the butt gets upwards of 195 and it's typically wrapped at that point, it's ready.  The bone will pull out very easy, then the pork is pulled or shredded.  I don't slice it. Your technique will improve with practice.  Look over the other posts to see what others do.

Good luck... JB
