Beef Short Ribs Help Please

OK so I just bought a half a cow and its in the freezer.  You should see all the steaks and roasts mmmmmmmmmmm so good

 So I open it up and see the ribs calling me.  I have the 18.5 sms and will be doing them on there.  So when doing these ribs will the 3-2-1 work?  These things are very thick!  I am only going to do one package incase I do screw this up.  BTW I have mastered pork ribs.   Just have never done beef.  I am also throwing on two pork shoulders tonight.  Both are 7.5lbs  They should be done in time for football!

Any input would be great!  Thanks in advance!

Okay if I stand by your side and read the replies?  I bought a couple of packages of those awhile back, but I just haven't had the confidence to do them, not having seen many recipes float through.  All I saw were reminders that they were usually braised.

OK so the short ribs are on the smoker.  I just put them on and put a dry rub on them.  I will leave them on for 3 hours then wrap in foil and spray with a apple juice vinegar mixture.  I will keep you posted.
 
You will be ok with the 3-2-1. Take notes. I have tossed them on the second rack in my UDS and let them go while I did my spares above. I pulled them out when I un-foiled the spares and let them rest. They were great snacks while the spares finished up. That was the first time I did them.

Since then I have done them right along my spares with foil..

For my rub, I just season them with kosher salt about an hour before cooking, then some fresh cracked pepper, garlic and thyme before going on.
 
Thanks Pit!!!!!  I just put them in the foil and sprayed them with the liquid mix.  I can already see them pulling away from the bone.  I am taking pictures during this whole process too.  Everything sure does smell good.
 
OK so the ribs turned out amazing!  I did the 3-2-1 and they were falling off the bone.  DEANOAZ I say go for it and try your short ribs.

  I'm on  my way today, thawing them out.  Tonight into fridge with a rub, then into the smoker tomorrow (I'm going to follow the 2-2-1 approach).  Still working on a homemade sauce to put on them while they are in the foil pan at the second stage.
