baby back ribs

3 racks of baby backs from sams.. Going to do a 2-1-1. Two marinated in some john henrys pecan rub and I am testing out a new rub I made on the third......

Ribs


Braunfel RF cleaned up and ready to go


ribs rubbed and overnight in the fridge.. placed in the smoker at 10:30 am


sittin steady


I rub down the ribs and set in a deep pan and catch the blood and the rub mixture and use this to baste and add some to the foil process with a little water


see ya in a few hrs
 
two hrs in... 1 hr then flip for the second hr..... time to foil........ I pan foil with the juices left over from the blood/rub

 
Here they are finished in the pan foil... Had the right amount of fat rendering.. the bone is starting to show


Lightly basted with some curley's bbq sauce for the final hr

 
Well I finished the ribs with some problems but they still turned out very good. My smoker had a stall... I kept throwing some hot charcoal in but it was not going over 200... I used pecan wood I acquired for this smoke and not usually using my dry hickory I buy at Lowe's.... The ribs were a little larger than I usually get also..... Just goes to show just changing one little thing that is working will cause a drastic change in the outcome.... I threw some rub together for one of the ribs and was happy with it but its not quite there yet for off the hook rub.......

. You said you wanted a little kick in it, try using some Ground Cloves , (a little at at a time, it gets overbearing quickly , but adds a nice zing folks comment onlike "What's that I get?".

Just a though.
