I have 2 slabs of spare ribs resting in a rub and i plan on starting them tomorrow morning around 10:00am. My question is I have a WSM 18" and last time I smoked Ribs i had to cut one rack in half. (to fit both slabs on the top grate) I sqeezed the full rack in the middle and had 2 half racks on either side. The first time i smoked ribs, I used skewers and smoked the ribs standing up but i didn't like the presentation of the ribs when they were done. Can i place the beans underneath the top rack and have the top rack (full of ribs) dripping into the bottom rack holding the beans? Trying to take the top rack of ribs off ( after a couple of hours) to get the beans onto the bottom rack seems like a recipe for disaster.

Any suggestions or am i complicating this for no reason? Buying a 22" WSM is not a solution......:)

BIG YES to having the ribs above the beans to catch the dripping
