My name is Michael.  I have worked in restaurants and professional kitchens for over a dozen years, more than a decade ago.  I have been smoking, grilling, cooking and good fooding most of my life.  Ever year my brother in law and I get his BIG smoker out and we have a weekend smoke fest.  For one of these smoke fests, I made the most perfect BBQ Sauce IMHO.  It had an earthy base of caramelized onions, roasted garlic, and fire roasted peppers.  The smoked tomatoes took almost a week to reduce to the right texture.  It had three layers of sweet with brown sugar, caramelized white sugar, and honey.  Instead of ketchup for the tang I used chili sauce.  When  it was finally done,  I had 2 quarts of beautiful BBQ sauce that still bring a tear to my eye when I think about it.  I WISH I had taken notes.  I have been trying to recreate it ever since.

The other night I was doing research for the latest smoker version, and ran across SMF. What a great website.

 Sorry Bro...Your story was GRIPPING then that last line just Cracked me Up!...SOOO Many of us have been down that road. You have to remember " Something " about the quantities...You Smoked the Tomatoes the whole time? What kind of Peppers? Any Herbs and Spices? There are a few Pro Chef's and some of the best, most creative and friendliest Smokers in the World, right here! With a little more detail we may be able to nail this sauce down...Of course it won't be a Secret Sauce...Unless you PM one or more of us to work privately with you. Welcome to the SMF Family...JJ
