My wife bought me an ecb as a gift. I used it and smoked a 4lb pork roast. It was ok, but was too smokey tasting. I have not done any mods except installing a new temp gauge. I hovered anywhere from 200 to 270 degrees. I know big gap. Should I drill holes in the charcoal pan? I cut some thin sheet metal and made a slide so I can add more charcoal. Works well and is quick and easy. I am just wondering what mods I should do. I did not have a problemm with ashes putting my fire out like others have. I am just looking for some help to make some good tasting q in an ecb! I had to tend to it every half hour and was hoping for help and not having to babysit it as often. Thanks.
 
bfd, morning...  too smokey ?? sounds like you used mesquite...  About the mods to make.. search "ecb mods" in the search bar.... there are dozens of threads with great ideas...   Dave
 
No I used apple chunks. I had a couple flareups so that could have caused the extra smoke flavor. I also could have used too many chunks. I'm still learning with it.
 
Relax, have a beer and make a few notes.  Until you get a few runs under your belt with something new notes can be helpful.

A store that sells wood and pellet stove may have one of the old fashioned skinny shovels used for adding pea coal to parlor stoves.  That's what I use and it fits in the door nicely.

I used too much wood. I smoked a couple of small button roasts and they turned out great. I still need to make the moss though. I still am not having temp problems, just a lot of babysitting.
