Thanks to TulsaJeff for creating this website and forum.  Having experienced really good smoked meat about a month ago, I have much to learn.  I look forward to being part of this community.  I use a charcoal barbeque at present.  Hoe can I control the temperatures in smoking is my biggest challenge.

Another challenge for me is how to smoke in the spring and fall when the outside temperature might only by in the 60's.

cansmoke, your best way to control the heat is to "practise" , over and over...get a reliable thermometer and keep doing those small Chickies a few times and then go to a more expensive meat...If you don't get any - Charcoal help in a bit , I'll bump it and see if one will show up...
