Hello everyone.  I'm new to smoking.  I don't have a smoker now.  I have smoked ribs, brisket and butts on my webber pot belly grill.  I've been looking at the MES40 units and the Great Outdoors gas smokers.  In addition to smoking the above meats I would like to do jerky, cheese, sausage and maybe some bacon.  I know from reading on this well informed board that the MES can do cold smoking.  I've read more about the MES then any of the gas smokers.  Can you do cold smoking on a gas smoker?  How low can you accurately control the temperature?  Also could someone recommend a size or model to get?  I don't want to have cut anyting in half to make it fit the smoker.

I have a GOSM Widebody 3405BGW and after a few modifications I can maintain 135* and vary temps in about 10* increments.
