So a little while back I gave the 2-2-1 method a try on a single rack of baby backs, and they turned out really good.  ALMOST what I was looking for, which right now is that fall off the bone clean type of rib.  Last time the ends and edges seemed to be ready to fall off, but the middle was still giving a little pull.  

Today I found a set of two small baby backs for just over $6, about 1.75lbs all together.  Going to try the same exact method but I think I'm going to try foiling at the 1.5 mark, then do a 2.5 middle section, ending with the last hour as usual.

Zatarains Zesty/Bold rub on the left, and Emeril's rib rub on the right.  Didn't have time to whip up my own rub...so I went with what I had on the shelf.  They just went on before 3pm......going to hit it this time!

So far so goo, pulled em just under two hours in, and foiled them with a bit of beer and the basting sauces I made for each one. About to unwrap em here in a minute!

I think I may have forgotten which one is which! O well, I think they'll turn out fine either way hahaa.
 
WOW DO THEY LOOK GOOD!  Somehow the dangdest thing happened when I was unfoiling them and placing them back in the smoker.  A piece of meat just fell off the rib and stuck to my tongs.  Both hands were full so the only way I could figure to clean off my tongs was to, well.....MMMMMMM

So another huge round of thanks to everyone here who posts their hours of work to share with newbs like me.  I hit what I've been striving for the past few months...falling off the bone!!! I unwrapped them and threw em back on the smoker for the final hour, and just happened to take a peek at about 40 mins, and I'm really glad I did.  They were definitely ready to come off!

So this was an incredible success....although I will say I think they probably needed only a 2-2-.5 lol

They dried out just a hair during the final unwrapped phase, a result of their small size I'm guessing....so from now on I'll definitely keep a closer eye on the final stretch!! Thanks for lookin!
