I've never cooked ribs before and thought I'd give it a go in my new electric smoker. I read a bunch of different ideas and techniques and thought I'd go with one of the recipes from amazing ribs.com.
I smoked them with cherry, the only wood I have at the moment, for about 4.5hrs at 225 degrees. No Texas crutch, no mopping. All I did was rub them and then sauced them at 4 hours.
One problem is that I've never had good ribs done right so I have nothing to compare them with. They did not fall off the bone but did crack when I tested them with the bend method. I also thought they were a bit dry but then again, I have nothing to compare them with.
The flavor was really good and not overly smoky. I used store bought rub, McCormick's I think it was, and for sauces Sweet Baby Ray's on 2 racks and Jack Daniel's original on the other 2 racks.
My biggest concern is texture and moisture. I need to try some good ribs so I have an understanding of what I'm shooting for.
