     Hello. I am a seasoned charcoal and gas grill-er who is jumping head first into smoking and indirect heat cooking. After years of Weber's and various gas grills I have purchased a new char-griller with a side fire box to try and learn new ways to cook before I go all out and buy more grill than I need at first. The model I have is a 3001 gas grill that I have customized to be easily converted between gas grilling and smoker box cooking. By making it versatile it gives me the ability to gas grill in the main chamber and charcoal grill in the box on a regular basis.

     I like this because it allows me more heat control with the gas and still get the charcoal flavor. With about 10 min of lining and sealing I can convert my grill into a decent smoker. It is not the duo model so I cant do both at once but It is practical for me with minimal investment at first. All of my mods were done for under $50 so far and seam to work just fine. Due to my mechanical and engineering background I have a more technical and analytical approach to this. I want to learn more of the artistic side of seasoning, marinades and cooking styles.

     I hope to have mutually beneficial relationships in this chat room and will definitely share my experiences and would appreciate any insight anyone has.

I am extremely jealous. I am from MD and would LOVE to move to SC.  I would be there in a heart beat if I could get a decent playing job
 
That"s where my wife and I got lucky. Both of us are skilled tradesmen and the rate of living down here is phenomenal. It being beautiful and low key helps.
