I first heard of these quite some time ago, but finally got to try some today.
It doesn't seem that there are any hard and fast rules, so, I used 1 pkg cream cheese, about a cup of shredded sharp cheddar, a tablespoon of dijon mustard, and a tablespoon of hot sauce, mixed it all together, and filled the jalapenos. (sliced length wise) I then sprinkled with cayenne pepper, and topped with 1/2 slice of bacon.
Popped them in my new Char-Griller
And after 2 1/2 hours @ 220 (the pic doesn't show it, but I have installed dual grate level therms) they looked like this:
The one poor guy at the bottom left was too close to the fire at first.
They sure were popular!!
I should have taken pics of the steaks and corn I grilled a little later.
