Hey all,

Decided to do a pork butt today.  Doing this on a MES 40 with a Amazn Pellet box.  Hit the butt with mustard and rub last night and let it sit in the refrig.  Got up at 5:00 AM this morning to get the show started.  Here is how it looked this morning before going on the smoker

Here it is at the 3 hour mark.  Hit it with a little spritz and put the temp probe in.

Smoking this at about 240.  Everything seems good so far.  Butt is 7 lbs and is sitting at about 125 after the probe settled in.  15 more degrees to get into the safety zone.  I plan to foil at 165 and let run up to 205, will let it rest in a cooler for an hour and then pull.  I will then hit it with some finishing sauce before serving.  I am also doing some of Dutch's beans later as well.  Will post more pics as the day progresses.
 
Sounds like a good plan and looking good so far!

For your future smokes, to make clean-up a little easier, you may want to line your water pan and drip tray with foil and remove the racks that are not being used.

Looking forward to seeing the finished product.....
