Hi Gang

I'm still pretty new to SMF and I'm all ears, so to speak.

My buddy is going to give me some moose to smoke this summer so I'm looking for suggestions on rubs, marinades, cooking tips - you name it.

Hopefully we can share info and I will definatelllllllllllllllllly take photos.

Two things:

In my experience, cooking moose is identical to cooking lean beef, so I would simply search the "beef" section for a recipe/rub/etc that strikes you. Think of it as lean beef, dont overcook it, and you'll be fine.

Be sure to ask your buddy what cut he's giving you - match the right cooking style to the cut.  I know its kinda obvious that you dont cook a brisket the same way as a ribeye or a burger... but so often I see/hear people use "its wild game" as an excuse to ignore everything they know about cooking.  Then they wonder why they dont like it.
